I have a gray G3 desktop with OS9.2. A lonnnnng time ago I did something which would, upon startup, automatically open Eudora but I don't remember how I did it. I want to prevent Eudora from starting up each time I 'restart' the G3 -- where is the control for that?

I would expect to find an alias to Eudora (or the app itself) in System Folder->Startup Items. I would move it out of there.

You probably put an alias of the Eudora application inside of: System Folder/Startup Items. Trash it and it won't launch anymore. If you only want to temporarily turn off the startup items hold the Shift key down at startup.

In the System folder there is a Startup folder where you put an alias of anything you want to launch at boot time ... I suspect that's what you did ... so just drag it out again.
