Is it okay to leave your iBook in sleep mode and plugged in all the time? E.g. if I leave it like that for days, is that okay?

I generally do. Haven't had a problem so far.

I can't remember the last time I turned my iBook off. I think it was April. I don't see the point. So yes, it's okay.
Although it has turned itself off a couple of times recently. It's just asking me for a new battery (on order, waiting for delivery)
